Sometimes the simple pleasures are the best. And there are some things in their natural form that just can’t be improved upon. Like biting into a peach on a hot summer day and feeling the juice trickle down your chin onto your favorite white tee shirt! Well this dessert is both sublime and simple. From the joyous clink of the frozen berries, like ice cubes, into your glass…..to the sweet, rich cream which warms and bathes them back to their soft, sweet state.
But I have a confession. I’ve made this before . . . . .
It’s so easy and elegant. Just look at these berries! Can you blame me? Once you try this, I am sure it will become your favorite, quick, go-to summer dessert, too!

Honestly, the only planning ahead required is that you place the berries in a baggie in the freezer overnight. But I’ve learned that it’s a great idea to freeze some summer berries anyway. This would be a great treat to have when the winter doldrums hit!

Now to my confession.
Although this easy berry recipe is worthy to have often, I also wanted to make it again because I was embarrassed of my original photograph of it. I first made this 2 years ago when I started blogging and I was just taking photos with my dinky point and shoot. And while I’m trying to learn as much as I can about photography and food styling, I will be the first to admit that most of my better photography is pure LUCK!

Ok. Enough reminiscing. Let’s throw this thing together!
Level of Difficulty: ridiculously easy!
Servings: 6-8
ICED BERRIES IN WARM WHITE CHOCOLATE CREAM:
- 4 cups of fresh, mixed berries, frozen
- 2 cups of heavy cream
- 1 cup of white chocolate chips
Place the chocolate chips in a glass bowl. Warm the cream in a small saucepan over medium high heat just until the cream starts to simmer. Immediately remove the cream from the heat and pour it over the white chocolate chips. Let it sit for about 5 minutes. And then simply whisk the cream until all of the chocolate is melted and combined. Transfer the cream to a container that has a pouring spout (a glass measuring cup or a small pitcher will do!) Place the berries into tall serving glasses (enjoy the clink!) and pour the warm cream over the berries. Serve the dessert right away. Though I will tell you that the cream warm or cold over fresh berries is pretty divine, too!

This recipe lends itself well to variation. You may certainly use only one type of berry or mix them up. You can change your chocolate. Or you can add liqueur or spice to the cream. Be creative. But get those berries into your freezer tonight! A shout out to Butler’s Orchard for these beautiful berries and to South Mountain Creamery for the best cream in the whole world! And the best part of this dessert? It’s when you get to the bottom and the cream is sweet and pink from the berries!
